The name
The house behind the house
In German, hinterhaus is the rear building — workshop, still, quieter room. Bonnie and Nate Randall built that house at four thousand feet in Arnold. The lake, the timber, and the granite are the work, not a backdrop for it.
HIN·TER·HAUS — rear building, house at the back
Open air
The pot still sits in the weather
American Single Malt here is fermented in the open so Arnold’s flora can reach the wash. Local barley, Sierra water, elevation. Discovery prints the maltbill on the back label because the batch is the point.
From the bottle — open fermentation, mountain water, a provenance you can nose.
Wine casks
Calaveras in the oak
Bourbon rests in new charred oak at elevation, then in an ever-changing variety of local wine casks. Each batch stands on its own.

Sierra water
North Grove, South Grove, the sequoias
Vodka and gin are distilled from California wine and reduced with Sierra Nevada water. North Grove is the grove on the label — sequoias, mint paper. South Grove takes the botanicals. Both say distilled from grapes in italic, like the bottle.
Back label
Look up your batch
Malts, maltster, cooperage, and age are printed on the bottle and collected in the public listing. Example: Discovery Batch 6 lists Admiral Pacific Victor, Kilnsmith, and Great Western Pure California.
